Cookies ‘n Cream Pudding

Ok, the title just about says it all. How can you get better than Oreo’s, vanilla Jell-O, and cool whip?! Not only that its takes like 5 minutes
(even better)

Ingredients-
8 Oreo chocolate Cookies (crushed!)
2 cups cold milk
1 package of Jell-O vanilla flavor instant pudding and pie filling (if your a chocoholic like I am you can also use chocolate flavor instant pudding and pie filling )
3/4 cups cool whip topping (yum)

Procedure-
break 1 of the cookies into 4 pieces go ahead and set aside (this will be a topping!)
crush the rest of the 7 cookies
pour your milk into a bowl, add your dry pudding mix; beat with a Whisk until blended !
stir in your crushed cookies
gently stir in 1/2 a cup of the whipped topping
spoon your pudding into bowls and place broken cookie on top 🙂 (makes about 4 servings)
store leftovers in the refrigerator

Peanut Butter Chocolate Squares

Chocolate and peanut butter is a great combination that’s been around for ages! Here’s a simply scrumptious desert with one of our favorite combinatons!
Ingredients-
3/4 cup graham crackers
1 cup smooth peanut butter
1 cup (2 sticks) butter
3 1/2 cups powdered sugar
1 1/2 cup chocolate chips

Procedure-
spray a 9 by 13 inch pan with cooking spray go ahead and set aside.
in a large bowl, combine graham cracker crumbs, peanut butter, melted butter, and powdered sugar(i have also seen people put some chocolate chips in with this mix 🙂 ) mix well!
spread the mix into the pan you put aside earlier
in a pan heat your chocolate chips until melted
stir the chocolate chips constantly until they are melted 🙂
once the chocolate chips are melted, spread the melted chips over your peanut butter mixture ( yum!)
place the pan into the refrigerator to cool before cutting squares, the time is different for every one I usually check every 2 hours 🙂

Red Velvet Milkshakes

Didn’t I say I love Red Velvet? Not only that but I love milkshakes! And its super easy to make!

Ingredients-
1 cup Vanilla Ice Cream (yum) or cake batter ice-cream for more cake-like flavor
3 tablespoons Red Velvet Cake Mix
1 teaspoon Vanilla Extract
1/2 cup milk

Procedure –
blend all ingredients together until smooth !
add more or less red velvet cake mix to liking (will change the color and flavor) 🙂
Also try cake batter flavored ice cream for a more “cake-like” flavor!

Spinich and Fetta Quiche

I’m not the biggest breakfast person, but I know its the most important meal of the day! So I struggled to find things I like to eat for breakfast. When I found this I doubted I would like it because I’m not the biggest fan of eggs, but I decided to try it and to my surprise it was wonderful!
Ingredients-
1/2 cup butter
3 cloves garlic, chopped (the jarred garlic works too)
1 small onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (6 ounce) package herb and garlic feta, crumbled (I acutely used goat cheese but it yummy either way)
1 (8 ounce) package shredded Cheddar cheese
salt and pepper to taste
1 (9 inch) unbaked deep dish pie crust
4 eggs, beaten
1 cup milk
salt and pepper to taste

Procedure-
Preheat oven to 375*
In a skillet, melt butter over medium heat. Sauté garlic and onion in butter until lightly browned. Stir in spinach, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust 🙂
In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture.
4.Bake for about 15 minutes. Sprinkle top with remaining Cheddar cheese(yum), and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving!

Red Velvet Cupcakes

I absolutely love Red velvet! and I love cupcakes so this recipe was a match made in heaven 🙂

Ingredients-
1 cup all-purpose flour
1 tablespoon unsweetened cocoa
1/4 teaspoon baking powder
1/4 teaspoon baking soda
Dash salt
1/4 cup butter, softened
2/3 cup sugar
2 eggs
1/2 cup sour cream
1 1/2 teaspoons red food coloring
1 teaspoon vanilla

Procedure-
preheat your oven to 350 *
Combine flour, cocoa, soda, baking powder
baking soda and salt go ahead and set aside
Beat together butter and sugar until creamy
Beat in eggs until well blended. Beat in sour
cream. Blend in dry ingredients. Blend in
red food coloring and vanilla
bake for about 20 minutes or until toothpick comes out clean 🙂

Red velvet and cream cheese icing is always a tasty combination so here’s a simple cream cheese icing 🙂

Ingredients-
4 ounces unsalted butter, softened
4 ounces cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract
procedure-
In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth. Beat in the vanilla extract 🙂

I took a cake decorating class and my very favorite thing to do on top of a cupcake is a professional looking swirl but its always fun to frost them crazy colors and decorations so have fun and happy baking!

Smoothies

During the summer (and the entire rest of the year), I’m constantly craving smoothies. But I just can’t head down to kiva juice every time I want one ( I wish I could). So making them my self seemed like a good idea to me! Here are some of my favorite smoothie recipes 🙂

Triple-Berry Blend-
1 1/2 cups mixed blackberries, strawberries and raspberries with 1 cup each milk and ice, and sugar to taste.

Raspberry-Orange-
Blend 1 cup each orange juice and raspberries, 1/2 cup plain yogurt, 1 cup ice, and sugar to taste.

Peach-Mango-Banana-
Blend 1 cup each chopped fresh or frozen peaches and mango, 1 cup each plain yogurt and ice, 1/2 banana, and sugar to taste.

Banana-
Blend 2 bananas, 1/2 cup each vanilla yogurt and milk, 2 teaspoons honey, a pinch of cinnamon and 1 cup ice.

I love smoothies and I absolutely adore these! Happy blending guys!

Cake Cookies

I always had a problem with my cookies being really good right when they came out of the oven, and then drying out and becoming hard as a rock only 10 minutes afterword. I tried these cake cookies as a last attempt for soft chewy cookies that should last, and they came out wonderfully!!! Best cookies I have ever eaten, and baked!

INGREDIENTS
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
14 tablespoons (1 3/4 sticks) unsalted butter, room temperature
3/4 cup granulated sugar
1/4 cup packed light-brown sugar
1 teaspoon salt
2 teaspoons pure vanilla extract
2 large eggs
2 cups (about 12 ounces) semisweet and/or milk chocolate chips

Procedure
preheat the oven to 350*
whisk together flour and baking soda
go ahead and set that aside
in a electric mixer
combine butter and both sugars mix on medium speed until light and fluffy 🙂
reduce speed to low and put in the sat vanilla and eggs continue to mix
add in the flour mixture mix until combined
add in the chocolate chips
grease a pad and put balls of dough on like regular chocolate chip cookies
cook about 12 minutes ,or until brown around the edges
