Red Velvet Cupcakes

I absolutely love Red velvet! and I love cupcakes so this recipe was a match made in heaven 🙂

Ingredients-
1 cup all-purpose flour
1 tablespoon unsweetened cocoa
1/4 teaspoon baking powder
1/4 teaspoon baking soda
Dash salt
1/4 cup butter, softened
2/3 cup sugar
2 eggs
1/2 cup sour cream
1 1/2 teaspoons red food coloring
1 teaspoon vanilla

Procedure-
preheat your oven to 350 *
Combine flour, cocoa, soda, baking powder
baking soda and salt go ahead and set aside
Beat together butter and sugar until creamy
Beat in eggs until well blended. Beat in sour
cream. Blend in dry ingredients. Blend in
red food coloring and vanilla
bake for about 20 minutes or until toothpick comes out clean 🙂

Red velvet and cream cheese icing is always a tasty combination so here’s a simple cream cheese icing 🙂

cream cheese icing:

Ingredients-
4 ounces unsalted butter, softened
4 ounces cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract
procedure-
In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth. Beat in the vanilla extract 🙂

I took a cake decorating class and my very favorite thing to do on top of a cupcake is a professional looking swirl but its always fun to frost them crazy colors and decorations so have fun and happy baking!
